  The word "vegetable" is not scientific, and is therefore up to the individual to define. I could say a car was a vegetable and be right. I could also say a tomato isn't. Botanically, it is a fruit. In USA and Europe, it is legally, a vegetable.

Oh, and they don't have a word; we have made the word "paradox" for paradox's. Me saying "This sentence is not true." is a paradox, but not a true paradox, since it is solely based on the way our minds have decided to build up our language, and therefore does not contradict in nature.
Another reason is, we thought of it and needed a word. Take "infinity". We can't prove such a thing exists, it most likely doesn't, and yet we have a word for it, simply because it helps us describe so many things.
