I can say the first one is really easy, can be seen easily.
The second one is tricky, but ahs a mark (even that, I think players will still miss that opportunity) and 3 is a devil one, Just like sometimes nintendo likes making them :P

  let me guess, you have to feed a Hungry Luma 800 star bits to get to one of them? xD

  It's very tricky, and the greed to go to the goal also make very few people wanting to find it.
Oh and small hint, for STBVIII(wish has 2D mario galaxy like gameplay) there are 3 hidden star pots, good luck on finding them, har har har!
